Guinness Braised Short Ribs

Ingredients

  • 2 lbs. boneless short ribs
  • 1 onion diced
  • 1 large carrot diced
  • 2 celery stalks diced
  • 2 bay leaves
  • 2 smashed cloves of garlic
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 1 14 oz. can Guinness

Directions

  1. Season and sear short ribs on high heat until brown.
  2. Coat vegetables in tomato paste and roast until caramelized. Combine all ingredients in a large heavy pot and braize until short ribs are fork tender.
