Candied Lemon Peel


  • 4 lemons
  • 10 cups cold water
  • 3 cups of sugar


  1. Peel lemons and cut into long thin strips. Place strips and water into a small saucepan and bring to a boil. Drain and repeat process three times beginning with cold water each time. After the 3rd boil refresh water and add sugar. Bring to a boil once again while stirring to dissolve sugar and add peels, simmering until translucent. Drain excess sugar syrup and dust with additional sugar.
